About This Tool
Boiling water (212°F) scalds green and white teas, releasing bitter tannins. The lower temperatures preserve delicate catechins and provide a sweeter cup. Multiple steepings (gong fu style) are common with oolong and pu-erh; each subsequent steep gets 30 seconds longer.
